All types of cuisine need heat to cook the varied menus on offer with cooking oil, of one kind or another, being a necessary part of the preparation process.

When heat and oil combine a grease laden emission is generated and is normally captured by the kitchen extract system. The canopy within the kitchen extract system will be fitted with removable grease filters which catch some of the grease particles but not all of them. These “fines” deposit themselves on the internal surfaces of the ductwork and dependant on the style and frequency of the cooking take on the appearance of runny grease.

It is this grease that constitutes a fire risk which is the prime focus of insurance companies when investigating a claim or offering cover. Without a current cleaning certificate from an Heating And Ventilating Contractors Association accredited company it is unlikely that a claim will be settled or cover renewed.

To clean a kitchen extract system to HVCA standard requires access doors to be fitted every 3 meters so that access to the whole of the system can be obtained. If a system does not have sufficient access door fitted then it is highly unlikely that the fire risk has been totally removed.
